We have such an abundance of wild garlic around us, I’ve been trying to come up with different ways to consume it. Some are more popular than others. Myself and HWH loved this one, but younger kids were not so keen!
I simply fried and onion, added some diced potato, and once softened threw in several large handfuls of wild garlic and one of spinach (softens the taste). I added stock and once cooked, some cream. I think this was the source of my younger children’s dislike…so I could leave it out another time. However, it’s what turned this soup from a healthy one into an indulgent one for me!
